Apple Bread Pudding

Ingredients

  • 4 slices whole-grain bread
  • 1/2 cup raisins or chopped dates
  • 1 cup unsweetened applesauce
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/3 cup light brown sugar, packed
  • 4 large egg whites
  • 2 1/2 cups vanilla soymilk
  • Powdered sugar (optional)

What You Need

  • 8″ x 8″ x 2″ baking pan
  • Cutting board
  • Knife
  • Blender or food processor
  • Small bowl

How To Make It

  1. Lightly oil the baking pan.
  2. Cut the bread slices into 1″ cubes.
  3. Separate the eggs, reserving the yolks for another use.
  4. Blend the applesauce, cinnamon, vanilla, brown sugar, egg whites and soymilk thoroughly.
  5. Place bread cubes in baking pan, distributing evenly.
  6. Sprinkle raisins on top.
  7. Pour applesauce mixture evenly over the bread cubes and raisins.
  8. Allow the pudding to set for 10 or 15 minutes before baking.
  9. Bake for about 60 minutes. (Pudding should be set in the middle and lightly brown.)
  10. Dust with powdered sugar.
