Arugula And Goat Cheese Salad

Ingredients

  • 2 shallots
  • 1 clove garlic
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 3 packets Splenda sugar subtitute
  • 2 tablespoons fresh Italian parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1¼ cups arugula
  • 2 heads radicchio lettuce
  • 1/2 cup soft goat cheese

What You Need

  • Cutting board
  • Sharp knife
  • Medium bowl
  • Large salad bowl
  • Whisk or fork
  • Measuring cups
  • Measuring spoons

How To Make It

  1. Peel and very thinly slice the shallots.
  2. Finely mince the garlic cloves.
  3. Combine the shallots, garlic, oil, vinegar, Splenda, parsley, salt and pepper in a medium bowl.
  4. Whisk together until well combined.
  5. Combine the arugula and radicchio in a large salad bowl, tearing the greens into bite-size pieces.
  6. Pour the oil and vinegar mixture over the prepared greens, tossing gently to coat.
  7. Allow the dish to sit for 4 to 5 minutes, to allow the flavors to mingle.
  8. Toss again.
  9. Divide among six salad plates and serve immediately.
